  • 1 kg of prawns
  • 4 ripe tomatoes
  • 2 onions
  • 1 tablespoon of extra virgin olive oil
  • 2 teaspoons of saffron
  • 1 sprig of thyme
  • Salt, pepper
  • 4 red peppers
  • 2 glasses of cold water
  • 1 glass of white vinegar
  • 2 limes cut into 4
  • 2-3 tablespoons of brown sugar
  • 1 minced clove garlic
  • 1 1/2 teaspoon of fresh ginger
  • 1 teaspoon of chopped lemongrass

Preparation of the dish

– Thoroughly clean the prawns, keeping the shells.

– Finely chop the onions lengthwise.

– Seed and cut the tomatoes into small cubes.

– Put all the spices (thyme, garlic, ginger, pepper and chopped lemon grass) in a mortar and pound them.
Preparing the marinade

– Put in a large bowl the prawns with olive oil, vinegar and crushed spices.

– Mix well and let stand from 30 minutes to 1 hour.

– Heat the griddle to 250 ° C down to 200 ° C.

– Then put the prawns and cook for 2 minutes then turn them over and let brown 2 min.

– Lower the other side of your griddle to 100 ° C , and then deposit the onions and tomatoes. Brown them.

– Arrange on a warm dish your brushed prawns at the last moment with a little marinade , then accompany with tomatoes and onions cooked.

You can accompany with a white rice with lemon zest.
