Chocolate and pistachio crepes

  • 250 g wheat flour
  • 1 tablespoonful buckwheat flour
  • 100 to 125 g of sugar according to taste
  • 10 cl water
  • 2 eggs
  • 1 level teaspoonful of rock salt
  • A 25 g packet of vanilla sugar (or other flavor)
  • 25 g of melted butter or a tablespoonful of oil
  • 500 g dark chocolate
  • 250 g crushed pistachios
  • 1/2 liter semi-skimmed milk

Preparing the batter

– Put the sugar, buckwheat flour, melted butter or oil, pistachio paste, water, rock salt, flavored sugar and eggs into a bowl.

– Beat the mixture and gradually add the wheat flour and half a glass of milk. You should obtain a smooth batter with no lumps.

– Add the rest of the milk.

Leave to stand for about an hour before cooking

Preparing the filling

– Chop the dark chocolate into small pieces. Melt in a bain-marie.

– Coat your crepes with melted chocolate and then add a few crushed pistachios.

Decorate with mint leaves, shavings of coconut or glazed fruit.
